Festal Pumpkin Pie Recipe
Ingredients
For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter chilled and cubed
- 6 tbsp ice water
- 1/2 tsp salt
For the filling:
- 1 3/4 cups canned pumpkin puree
- 3/4 cup granulated sugar
- 1 1/2 cups evaporated milk
- 3 lg eggs
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, combine the flour and salt for the crust. Add the chilled butter cubes and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish and gently press it into the bottom and sides of the dish. Trim any excess dough and crimp the edges.
- In a medium bowl, whisk together the pumpkin puree, sugar, salt, cinnamon, ginger, nutmeg, cloves, eggs, and evaporated milk until well combined.
- Pour the pumpkin filling into the prepared pie crust. Smooth the top with a spatula.
- Place the pie on a baking sheet and bake in the preheated oven for 15 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for another 40-50 minutes, or until the center is set.
- Remove the pie from the oven and let it cool completely on a wire rack. Once cooled, refrigerate for at least 2 hours before serving.
